You'll be fine. Its unlikely the yeast froze or got too warm. Even being December its not that cold in transit where I'd worry about it.

People make this way more complicated than need be. I clean my bottles after pouring from them (hot water + bottle brush and rinse a couple times), drain in my dish rack and store in cardboard boxes....

I'd be very careful. That is a sure sign of a bottle bomb. Very, very carefully move it to the coldest part of the refrigerator (it could blow off your hand if disturbed) and leave it to cool off...

+1 Beer takes time to mature (unfortunately :(). I keep mine in the fermenter for at least a month. A week (even two) is far to short a time to judge where a beer is at.

Don't over think it. Storing your bottles with the cap off is just fine. Provided you cleaned your bottles and dried them before storing, any contaminates that could make their way in would be killed...
