I'm sure it was not a 6oz more like 11.5G. For a lager pitch cold and pitch a lot 2 packs of dry yeast is good for most styles.

For this batch most of the active fermentation sounds like it is mostly over. Just leave it alone for 3 weeks and let it finish up.

You can taste the same beer from the same bottle and unless the the factors are the same you can taste different things. What you had to eat before has a major impact on how the beer taste.
