I use close on 30% rye malt with 10% crystal...

I use close on 30% rye malt with 10% crystal wheat and they go together very well. Add to this HUGE hop flavour/aroma and you are on to a winner.
The colour be damned!

I think the accepted knowlege is that lacto will not do its thing above 8IBUs

I have bottled using Notty,Windsor and s-04...

I have bottled using Notty,Windsor and s-04 without any problems at all. And that is drinking on day 17-18.
But I do tend to hop the living crap out of my beers.
Maybe you are using too much carb...
