Although I've never used pineapple in a beer I have made a pineapple mead and fermented pineapple juice does not taste like pineapple. Just something to be aware of.

Not hopped to IPA levels but you might want to take a look at recipes of Roggenbier for inspiration. They are german beers that made up of half barley malt and equal portions of wheat and rye malts.

But as others have said nothing to worry about. This yeast is known to produce this smell when fermenting. It does indeed go away.
