I would cut the hops ~1/2 if your going to lighten the body. This is on the hoppy side for a Vienna lager and would be very hoppy on a lighter base. You should be fine to keep the speciality grains...

Use 2 vials. I may of just used 1 vial, but error on the side of caution and pitch more. A big lager like this needs a lot of healthy yeast.

Me too! I haven't tested the limits yet, but I got down to 55 no problem. I am really hoping I'll be able to lager in the chamber as well. I think the fan is going to help alot.
