I looked back at my notes and it looks like I added a 1/2 tsp of acid blend. Never thought I'd be able to taste it:) Maybe it just blended with the mead flavor well!

I did vanilla with choc hazelnut tea. The mead tasted a touch citrusy at the time of racking...so hopefully the vanilla can cloud that over or it might come out tasting weird.

Don't move onto your clearing agent and bottling until its done fermenting. Take your gravity reading. If you don't finish your ferment and stabilize you'll have bottles potentially explode on you....

The only way to tell if the ferment is close to being done is if you took gravity readings with your hydrometer. Did you take these readings?
If so what are your numbers? Bubbling...

It does look like a lot of headspace but it also looks like it's in primary so hopefully its pumping out CO2 which should protect it somewhat. I'd move to secondary just before the ferment is done...

If your water tastes fine to drink I wouldn't worry about getting distilled. I've used tap for anything I've made and never had any issues
