Ringwood --> Diacetyl Rest --> Yeast Cake Pitch

I brewed a porter last weekend with Wyeast 1187 Ringwood Ale. Kind of a spur of the moment grab a recipe and brew session. Been reading up on Ringwood since then and sounds like an interesting yeast....

I boil filtered tap water and top-off with bottled water. I use StarSan to sanitize and PBW to clean. Different batches, different times, different fermenters - same results.

I'm bottling this weekend. Went extra-long in the primary due to a nasty illness. 3 weeks in secondary, and 3 weeks in bottle. Ready for New Year's. Looking forward to my bottling taste this weekend.

I was hoping OP would show up. I haven't tasted this yet, but envision a fairly sweet beer (raspberry, chocolate, D2, etc.) Oak would seem to go in a very different direction.

Buy Palmer's How to Brew. As a wine maker, you probably just need a kettle and a capper, but a bottling bucket is VERY nice to have.
