Let us know how it turns out. The wl 833 is my favorite yeast for my lagers. It has a nice malty backbone that is perfect for a Helles.

If you can find the wl 833 bock yeast, go with that. Otherwise, I would go with the saflager 34/70. It's a pretty versatile yeast strand. That's just my opinion though.

If you can hold at 10 Celsius (50 F), you should be good to go. Just make sure you can hold that temp and not have temperature swings. You don't want to have your beer having big temp swings.

I've done this recipe about 15 times with minor tweaks to the recipe. I've been splitting the batch with wl 029 and wyeast 2565. Make sure to lager at least two months. It makes a huge difference.

Just tapped mine today after three months of lagering. Nice saaz flavor. It finished dry-1.005. Abv was 6.4%, which is too high. Oh well.

You should be good without adding the yeast. There should be enough yeast in suspension to bottle condition. Make sure you wait 3 weeks or so before putting into the fridge to lager it out.

Anyone brew this lately? I'm doing it right now, but scaled down the base malt to 15 lbs for a 10 gallon batch. I upped the catapults to a lb for a little more body and head.

Just did an 11 gallon batch. Hit my numbers at 1.056. Fermentin at 50 degrees right now. This is an excellent recipe. I used Czech Saaz throughout, but the AA% were 3.0%.
