No problem. I also meant to say you can also (and should) prime your bottling bucket/bottles with honey. 1.5 oz honey per gallon to get 3.0 vols of co2.

Go for it. I brewed mine a couple weeks ago with all Maris as my base malt and its great so far. Don't see why partially using Vienna would give you anything but a good beer too. Cheers!

Thanks for the input. Cheers! My friend and I overhauled the original recipe to make it an imperial and I tinkered with the ingredients. We'll be using 5-6 lbs of cranberries.

I work at my LHBS, and I wouldn't have recommended that yeast for this batch at all. You could be okay, and I don't mean to stress you out, but if they do die, then you will be stuck at a higher FG...

D47 is awesome for mead, but the K1v1116 is suited for this because of its alcohol toleration. I'm fairly certain the D47 yeast will kill themselves before it ferments-out.

Anyone have any recommendations for a hearty substitute? I'm using white wheat and pils for my base grains, but it doesn't necessarily need to be a wheat beer yeast like a hefe.

I've made plenty of meads before, but when making a raw honey mead, I typically don't use anything but water and the raw honey because I've been afraid of damaging this natural, nutrient-dense honey....
