I am running a RIMS system with a TDWK XMTA-8000 Temp controller (first pic.) The original temp probe with the system broke (the wire) and I replaced it with an Auber 4" probe...

From what I have heard ambient needs to be ~10* lower then what you actually want to ferment at.

Yes.....Leave it alone....If it was a Belgian Style Triple your OG was what 1.070-1.080? Typically I leave triples in the carboy for at least a month before I do anything with them....
