I have 2- 15 gallon pots. I make 5 gallon batches all the time, and when I want to do a double batch, I can. It's the way to go in my opinion.

It's a great thing. It means the yeast are doing their job. As for what causes it, I honestly don't know, but it has happened to me on a couple of different batches.

Volume was right on.... And my Beersmith is set to 68%. That's pretty standard for me... I rarely hit 70% efficiency which makes it so odd....

I think your right on the money with yeast being the reason it doesn't have the flavor profile you are looking for. Aging does tend to mellow flavors, but I don't think a few weeks would mellow it...

Why not steep on the turkey fryer? A 6 QT pot is really small.... And a long spoon is nice to stir with, but not really necessary. And you need a hydrometer to take gravity readings.

Try one in 9 days. If it is ready in your opinion, then serve/bring it. I have had some brews that were ready in 3 days. I have had some that take 8 - 9 weeks. It all depends on the brew.

I have never had a bad microbrew at a bar, but most of the bars I goto take great pride in cleaning their lines every week, so their tap beer tastes just as good as out of the bottle if not better.
