You could definitely do this. But personally I would use a neutral bittering hop and save the mosaic till later in the boil to get the full use of its flavor and aroma profile.

If I'm doing the math right in my head it should give you an OG of around 1.055.

One of my IPA's has a similar hop schedule, but I use citra instead of centennial.
My grain bill is a little more simple.
With 2 row, c60 and a touch of honey malt....

You will only get bitterness from it.
So why not use a neutral high Alfa hop the and move it a late addition to get some flavor...

I then mixed up a half gallon of BLC.

I personally would not use more that 12oz of c20. You could add 4oz of honey malt for a little more sweetness if that's what your looking for.

As far as the hops go i would move the 45 min addition up to 5 min and move the 30 min up to 15 min or less.
