Unless you are brewing in the cold (under 60 or so) you shouldn't need any insulation at all. The stainless holds the heat very well. If needed, you can make a reflectix hood to slip over the top...

I made some insulating sleeves out of Reflectix that helps keep the kegs cold for hours if in the shade. Seems to help.

Do you mean PBW instead of StarSan? You shouldn't leave StarSan in S.S. as it's acidic and could potentially harm the keg. Never seen it happen, but... Iodofor can be stored in S.S. for a long time.
