When to carb a lager?
I just moved and filtered a Munich Dunkel that I made 3 weeks ago to a keg and am going to let it lager for awhile. Question is should I put the CO2 on it now or wait awhile?

Fermentation is complete, after a 3 day diacetyl rest, final gravity stopped at 1.012. With OG at 1.058 and FG at 1.012 that is 6%A ABV. Now starts to slow drop to lagering temps.

I have a Kal clone electric brewery and get 90-95% efficiency on every brew.
I have beersmith set to 90% so it reduces the grain bill by about 2lbs and still hit 1.058.

Hydrometer is dead on. I am using a clone of Kal's Electric Brewery which gets 90 to 95 percent efficiency all the time. I set my beersmith to adjust accordingly.
