If anything, I would think you're more likely to "mess up the carbonation" than with a properly capped glass bottle. It's certainly possible to have it not carb properly.

There has to be some kind of science with the alcohol in the beer and the mash. But, since this is homebrewing and I enjoy experiments as well, I say go for it. What's the worst that could happen?

If you haven't, I'd replace all the o-rings because you won't know how old they are. A full kit of those is cheaper than a lid, and you'd want to replace those regardless.
