Fruit flies like the smell of fermentation. I wouldn't worry about them getting in if you think the seal is good. I also wouldn't try any pesticides around your beer.

Interesting, I guess it has something to do with the temperature dependence of co2 saturation, which is why chilling your beer overnight is recommended

You recipe looks to have a lot of unfermentables. That could be the reason for the high fg, it's probably done and ready for bottling.
