Since it looks like you can step your mash I would consider doing 75 at 145 then 15 at 158 after your 122 rest. Really dry that thing out.

Yooper, don't northern English beers often have something to accentuate head like torrified wheat? I was thinking the OP's Carapils was kinda a surrogate for that.

Roeselare chocolate stout?

I've been really wanting to try this blend that JZ raves about. Wyeast says it creates some cherry flavors and I thought that might go well with a big chocolate (but not roasty) stout.

What do...

I wonder if being able to vorlauf means you potentially can end up with a more clear beer?

I would guess that this isn't anywhere near enough hops. Not enough IBU's and not enough late additions. Take a look at Vinnie's IIPA recipe. What's your dry hop plan?

I've just cracked my blueberry berliner Weiss. You could easily make a little batch of that. Just a vial of lacto, an envelope of S-05 and some patience and you're good to go.

Just out of curiosity, why Dasani and not RO and add a little brewers salts per AJ's sticky? Got to be a lot cheaper.
