Agreed, just drink it sooner. Every batch I've made has turned very acidic given enough time. The best use of extra acidic Kombucha is salad dressing.
I have actually used a SCOBY from Kombucha...

SHH nailed it. Use EC-1118 or Premiere Cuvee and hope for the best. I will say that a super sweet mead... 1.03 - 1.04 isn't the worst thing you can bottle.... Just leave it for a while.

Unexpected, but gives me an idea!

The in-laws gave me flowers! Like.... A LOT OF FLOWERS! Matter of fact, I ended up with 2 gallon ziplocks full of rose petals. So I made mead! (Duh!)

You need to warm that poor thing up! If you used ale yeast, you've essentially put it to sleep with the cold! Warm it up, give it a swirl and relax, it'll take off again.
