Spring SAP IPA

Every Spring I like to make a batch replacing water with sap from Sugar Maples that I tap once the run begins. I have done this a few time all with good results, but no real significant sap flavor....

This is the only pic I have. Taken of sample between 2nd and keg. No carbonation yet, but it came out with a white/ very slightly tan head, that had pretty decent lacing.
