I didn't need the gambrel. I installed in on some strut channel so I can slide it back and forth.

Yes, this is true. Wrap your vials/slants in tissue/paper towels. Place them in a cooler with gel packs before placing in an auto defrost freezer.

I prefer to remove the thermostat and tie those wires into the cooling relay contacts of the ST-1000. That way you still have a light when you open the door. You also keep the defrost mode.

Why did you rack to secondary after 6 days? Keep it on the yeast 2-3 weeks. Don't need to rack unless you are dry hopping. Give the yeast a chance to clean up after them selves then you won't have to...
