Just use a high flocculating ale yeast with good attenuation. S-05, wlp001, 1056, etc. and make a BIG starter. Aerate well after cooling and you should be set.

Happens to me with every brew I bottle haha...also with patience you get crystal clear ales. The trick is to brew even more so that you cant possibly drink all of it before it ages out :mug:
