Yeah, I wouldn't bother the bottles as they sleep either. If you really want to taste the brew as it ages, keg it up!

Beer changes character so much as it carbonates, as it settles into it's new...

I brewed the recipe I posted above on Sunday 30 Sept 2012 and I got a OG of 1.083. I had to add some water to bring my total volume up to 5 gal... I think after boil I had like 4 gallons.
