Thanks! I do see more yeast in the bottom but I will build this up 2X to make sure that I am good on the count. I don't think there is a kraeusen on this style of yeast. They claim its top...

So far it is only about 1L. I plan on adding another smak pak of Kolsch yeast and some fresh wort and bring it up to 2 - 3 liters.

I actually did a little research on the Wyeast 2526 Kolsch. It is pretty finickey it appears that it has taken up to 6 days for the starter to BEGIN to ferment! I would certainly never use this...

I am think about this Kolsch. Perhaps this strain behaves like a lager strain. I am going to try putting the started in the basement at 62 - 63 F and see if that unsticks the ferment.

The yeast has a manufacture date of Aug 15,2007. I put one pack designed for 100 billion cells in my started and am hoping to grow this to enough for a 12 gallon batch.

OG should be 1.052

I think you are 100% correct. I tried another ( wont try again for 3 weeks ). It is tart but not sour. I'm going to leave this batch alone and drink it in a month.

I had the same problem with a Sierra Nevada Pale Ale two weeks ago. Decided not to reuse them. I hope this isn't a trend.
