It will be fine, I have never had the water evaporate out of the airlock that fast - maybe it would in Arizona? If you ever do go away longer you can use a blow-off tube in a pint jar of water :)

Still true for the high temperature Belgian strains? I did a healthy yeast starter and ran my fermentation at 82 (in Americanese) and the beer was excellent, nice banana nose but no harsh alcohols.

I don't know if there is a definite answer for this, I keep them around 6 months. The cold should slow the spoilage process significantly.

I use a 15 gallon Blichmann for both 5 & 10 gallon batches. I started with 5s, but quickly realized that 10s are hardly any more work. So usually I do 10s, a better brewing time to beer ratio :)
