You'll end up with beer at the end of that process. Again, I'd caution against thinking about fermentation in terms of "days." Think in terms of "degrees Plato" or "gravity points". JMHO.

I believe it's "Lighten up, Francis." ;)

I'm not a huge fan of the term "homebrewer" myself but I don't get all bent out of shape about it. I often just use the term "amateur brewer."

I always advise new lager brewers to use dry yeast. Cheap and easy to pitch enough cells. Be sure to rehydrate as per manufacturer's product sheet instructions.

I've qualified for this several times but never bothered to enter. Hardly anyone knows or cares about the MCAB as far as I can tell.

I hate to be Captain Obvious, but the point of aeration is to achieve your target ppm of oxygen in your wort, not to get the most batches out of a disposable canister (I also started with the small...

Similar to the post directly above. I like that the author recognizes you can't use a calendar for fermentation--you need a hydrometer! I also don't lager in the primary but many do.

2 packs would be the minimum for 5g; be sure to rehydrate as per the manufacturer's instructions. I really would advise you to raise temps over 50 once you see fermentation slow significantly.

Sure, 155 is okay. To get "sort of" a decoction effect, add 1-2% melanoiden malt.

In general, the lower and slower, the cleaner. S-23 will work under 50 with a big pitch, but keep an eye on it and get ready to raise the temp as necessary to get it to finish off strong.

Temp Control for Massive Batch

Massive for homebrewing, anyway. My brew club (www.rivercitybrewers.ca or @RCMBrewers) is doing a 125 gallon batch of RIS for barrel aging this weekend. Wyeast suggested a fermentation temperature of...
