D-47 would work nice, just need to keep it under 70 degrees during the ferment or it will create fusels. Slice the vanilla beans lengthwise and add in secondary. Good luck.

Rehydrating takes about 15 minutes which can be done while you are mixing the rest of your ingredients. It really only takes 2 minutes, the rest of the time is just waiting for the yeast to do...

I have been using chips that I put inside a preforated tube that I just hang from the bung on the carboy. It is sooooo much easier than trying to load a bag or trying to remove one from a carboy.

I wouldnt boil the honey,you lose too many aromatics. As far as acid blends, are you adding in the beginning? Too low of a ph can stress the yeast a lot. Its best to wait until the end. Good luck.

3 months isn't very long for mead. Be patient(not easy ,I know) and you won't regret it later when you are sipping smooth and clear glass of your own mead.

I would stabilize with potassium sorbate before putting the mead in the jars. If the yeast was still active at all you would have mason bombs.
