Spray down your keg with sanitizer and look for bubbles. A small leak around the lid can easily keep it from carbing up.

I usually let mine go two full weeks at 35 and 16psi and it comes out...

You'll be fine. The amount of fermentation that occurs for carbonation is minimal. I'd bet that nobody will taste the difference.

I've always made a spice extract by soaking everything in a bit of rum or vodka or whatever clear spirit I have near by. Filter that through a coffee filter, then dump it in the full fermented cider.

I can do this for you as well. Or anyone else who wants labels made. I do this a lot for my own sketches and things (not just labels). I don't have a scanner so I just snap a pic with my phone.

Yeast produce alcohol and co2. Always. Well, at least as long as they are alive. There is no way for the yeast to produce one and not the other....

I carb mine a little higher than beer. I like cider that is light and crisp, and a little higher carbonation makes it more refreshing. I go for slightly over 3 volumes of CO2.

Yeah, you really should keep pressure on it. It will be fine for the first few glasses, but near the end it will get pretty flat unless you keep the co2 pressure constant.

I'm not sure what it is, but my cider has never gotten below 1.00, no matter how long I let it go. I'm not familiar enough with pears to know their effects, but something is adding weight to my cider.

I always add a few pears when I press my cider (5% or so, it adds a certain smoothness to it), and with ec-1118 it has never fermented out below 1.000.
