Okay. I have some WLP099 on the way. I'll do a double sized starter, aerate the hell out of it (since I can't exactly aerate the beer now) and cross my fingers.

I've kept it for months with no issues. I should test its Ph more often though. After every time I use it, I have less and less. I just work with what I have until the bucket gets about 1/2 full....

Out of curiosity, why soda bottles? I wouldn't trust the plastic for carbonation. Glass can break from overpressurization from 12oz. 2 liters behind plastic puts the odds of bottle bombs MUCH higher...

Don't stick it in a snow bank !!!! It will work for a few minutes, but the snow closest to the pot will melt then refreeze and actually insulate the pot. Think igloos. Salt in an ice bath works great...
