Looks like you may have just undershot the DME a bit. Rough estimate, but 1/2 cup DME is probably around ~80 grams, in a 2L starter that would only give you a gravity of about 1.015.

First pitch Roesalare can be notoriously slow. My experience has been that at 6 months it smells nice, but isn't sour. Between the 12-18 month mark it does great things.

ECY20 contains "various "wild" Saccharomyces species", probably tough to replicate that. No experience here as I haven't repitched my ECY20 yet, but I would think a normal pitch of a belgian strain...

I added the basil just after flameout during whirlpool so I wasn't concerned with sanitizing it. I didn't even rinse it, picked it fresh off the plants a few feet away and right into the boil kettle.
