I think this recipe looks perfect as is, brew it up and let us know how it turns out!

I'd probably mash at 156 or even a little higher, to make sure the fg isn't too low.

Sounds like a graff, have you checked out Brandon O's recipe? It's the same basic idea, keep some of the sweetness by adding unfermentable sugars to your cider.
