RM-MN, if the higher, shorter mash times don't work, try mixing in 30-50% of an English or Continental malted barley. They appear to respond much better to mash temp so you can work your mash.

I don't get headaches from drinking a lot my beers or most craft beers, but I do get poor sleep and my brain doesn't work very well for a few hours when I get up.

Ok, finally tracked down the second source--head brewer at Summit. If you want to listen, it starts at 1:27:00 or so and continues in various veins for a good 7-10 minutes.
