I second Yooper's comment. My favorite combo is Chinook/Simcoe/Amarillo. I just use the Chinook for bittering, but you could substitute almost any high alpha hop. I love the Simcoe/Amarillo combo...

Have you considered Amarillo instead of Centennial? I have found that it plays very nicely with Simcoe. In fact, that is my favorite dry hop combo.
