i dunno, i stay away from simcoe unless it's early in the boil. cat piss is not my favorite item on the menu. maybe replace it with chinook, to compliment that amarillo.

i would be more worried about "off flavors" (diacetyl, acetaldehyde, oxygenation) from a beer taken off the yeast too soon. some of the web stores have instructions to rack off primary after 7 days,...
