I may have mashed too high with the peak getting...

I may have mashed too high with the peak getting to 158- though it took a long time for the mlt burner to get there. Has anyone ever fooled with amylase?

I don't know how to tell a difference off hand. but wyeast site has attenuation at 73-77%. so if I could assume 75% attenuation that would leave me at a finish gravity of 1.018. So I"m about 10...

The wood has been stained and finished. I bought kilned rough sawed Wormy Maple from a Sawmill near me. My friend Dan (who essentially has done the whole build) built the doors you see from scratch....

He bought a couple sheets of plywood for the bar frame then to make the curvature with the finished top, he took 4" wide chunks of wood and laid them at a 45* angle .
