Ooh, almost forgot to mention sous vide! Perfectly done roasts/steaks/etc. My wife particularly loves that aspect, because being pregnant she isn't supposed to have beef anything other than well...

A positive to option 2 is having a breaker close by your brewing area, and not too far of a walk to turn power back on. Also, if you're set on 30a ignore this, but I would consider spending the money...

For easier cleaning I may have gone with a quick disconnect...

That has been a PITA for me in the past. Works, but aggravating. For me, I would just let the trub go into the fermenter. It'll all settle out anyways.

It really doesn't matter. You may get clearer beer and possibly more wort into the fermenter if you use a bag (if you're trying to avoid hop sludge in the fermenter), but IMHO it is negligible.
