I am having Christmas here for my family on the 25. Boxing day its to SWMBO parents for dinner. And the part I cant wait for on the 27th we are off to Quebec until the 1st for some snowboarding....

You cant add sugar unless you first add sorbate. If you add sugar it will ferment, and you will end up with super alcohol wines. You used natural yeast so nobody can tell what the alcohol limits are...

I was raised with auto siphoning, with the old suck till you get liquid. It has worked for my parents and granparents, but i have found auto siphon and wont ever go back.

If you ad campden you cant use priming sugar to carbonate, all the yeast will be dead. If you want it sweeter use lactose sugar to your taste it is unfermentable.

If you added more sugar you will have another fermantation unless you killed the yeast with campden or something similar. There will still be yeast in the wine and adding sugar means adding food.

as long as its going to be fine I dont mind waiting. I always leave wine in the secondary way longer than normal and it doesnt bother anything. I just want to make sure its not goinr to ruin my beer....
