Nothing yet, we have just let it sit for now. I don't think we are going to try enzyme approach. I think we are just going to let it sit for a few more months, oak it for a few weeks and bottle it....

For a breakfast stout I add in about 6oz of cold pressed coffee at flameout, and then another 6oz of cold pressed coffee at bottling (5 gallon batch). The coffee flavor comes across beautifully.

I would use these for dry-hopping. I've seen some breweries in the Pacific NW do this. Usually with IPAs.

Interesting note - pink peppercorns, aren't peppercorns at all, but a dried berry.

Thank you for the link, and sorry for my confusion. For some reason I was thinking OG = original gravity (and SG = starting gravity), and FG = Final Gravity. My mistake on that.

What's your highest gravity beer that you've made?

We just made a huge barleywine and hit a pretty high gravity. I'm pretty excited.
