Whats wrong with bread yeast? It ferments pretty clean if you keep it under 10%.. Doesnt lend much flavor... I'd never use it again though. I'd rather use the proper tool and get a better flavor.

It should have been 1.5 cups DME in 6 cups of water.... You're probably a bit under 1.040. If anything you need more DME, not more water. I say leave it.. It should be fine

The biggest problem is cleaning. all the coils need to ber perfectly spaced or youll have dips and rises where water stays. This definately isn't the best case scenario for sanitary...
