I'm so impatient, I can sympathize with this. However, I find that if I time my brews so that I'm too busy to bottle for at least 3 weeks, it forces me to sit back and let the yeasties work....

I've never actually used a secondary for my beers, I just let it sit in the primary for 3-4 weeks.
I tend to wait for the kreusan to settle, and then I do two hydrometer readings a day or two...

1lb grain = 0.75 LME = 0.6 DME
