brew set up question, full boil cfc indoor

so i am able to do full 5+ gallon batches on my kitchen stove (yes we have a burner with a power boil setting and it will achieve a pretty good boil with 6 gallons in it.) i want to rig my kettle up...

that beer is aweful, picked up a single of it to try and it was aweful, possibly the worst beer i have ever had. it is not a good representation of the style. try something else...

alright i did that and it came up with only needing 1 vial for the starter, but my question now is; i typically just use about a pint or so of water for my starters and about a half cup of DME....

i am looking into ordering AHS's Summer Saison Belgin Ale, and while looking at the order i noticed that they recomended pitching a double batch of yeast? i always make starters with my white labs...
