Ugh. I wouldn't use the bread yeast. But then, I wouldn't use an unknown yeast either. Good, known strains from Fermentis and Danstar are reliable and inexpensive. Easy to use as well.

I'll be tasting later today the first batch I've made with S-04. It's a Best Bitter NB kit. Normally I use Windsor for bitters and like the result but NB recommended S-04 so I thought I'd try it.

Lorne, these are different items that do different jobs. I use both, I have the large diameter auto-siphon and also use the orange carboy caps.

Yep. Works on all carboys. Hot water and the prescribed amount of PBW and it basically cleans itself. Especially if you get to it shortly after racking out of the carboy.

I use glass 6.5 gallon...

I like both Fermentis and Danstar dry yeasts. S-04, S-05, Windsor and Nottingham have all worked great for me. :)
