I've been using this strain in my latest recipe, and have noticed that it takes a long time to finish! Fermentation seemed to stall at 1030 in the primary, krausen never fell after almost 12 days. Transferring the batch to a carboy roused the yeast and it has been finishing off for the past 2 weeks now. Checked my gravity yesterday and it's now down to 1010 from 1070, much better attenuation than I was expecting. This should be around 8% abv at the moment, though I'm not sure what the alcohol tolerances are like with this strain. Anyone have experiences with this yeast? Will it be able to carbonate the beer at this higher abv level with a couple more weeks in secondary?
