Has anybody here ever brewed a beer with 3 or more different lovibond crystal malts? (e.g. 4 .oz 10L, 4 .oz 60L, 4 .oz 120L) Would it make a difference in flavor or complexity or would one "rule" another out?

Different level lovibond crystal malts will have different flavors associated with each one, the darker roast the richer the flavors are going to be. Many recipes will use a combination of crystal malts to help get the malt flavor where the recipe maker wants it. Check out the description of each grain to see which ones you want to work with.
 
Well, if you mixed up some white sugar, some brown sugar, and some dark brown sugar in a bowl, and tasted it, I'd think you would get a hint of character from each ingredient.
 
I've done porters with four crystals (including the Special B). Each adds a different set of flavors.
