If you like a mildly sweet with medium ginger flavor ginger ale here is my recipe. It took me 3x 5 gal batches to almost perfect it and im sure it can still improve more. If you have a sweet tooth you may want more sugar or add some honey, sugar in the raw, or brown sugar.

5 gal water
1 lb grated or chopped ginger
1 lb sugar
1 1/2 cup lemon

Bring water, lemon, and ginger to boil for 30 min
dissolve sugar
Cool then refrigerate. This can be done with counterflow or immersion cooler
Place all the sediment into the carboy/bucket
If you do not refrigerate you can risk contamination.
Rack after 1 week to remove sediment
Force carbonate for 5 min at 50psi and allow it to sit for 2-3 days at 50psi then turn down to serving pressure. It should be really carbonated.

The color should be milky with a light brown tint

My next batch i will be adding lemons zest from the squeezed lemons for more flavor.
