apple press pressure?

I'm building a plate-type cider press and the plans call for a bottle jack as a source of pressure. I have access to free (used) hydraulic equipment and would like my press to be powered (rather than manual). Is there a minimum and maximum amount of pressure required? The hydraulic pump I'm going to use puts out 2000psi but I have no idea if this is too much. I can do the math if I knew how much total pressure is needed on top of the apple bundles.
