I've only made cider once before. Very basic, 1 Gallon Juice and a half pound of corn sugar.

I have three 1 Gallon batches going now.
My local store has 1 Gallon glass jugs of Murray's natural no-preservative cider for $6. http://www.murraycider.com/products.html

Batch 1. Basic Cider
Apple Cider, a little brown sugar, clove and cinnamon

Batch 2. Cherry - Apple
Apple Cider, 100% Black Cherry Juice, corn sugar

Batch 3. Cobbler Cider
Apple Cider, a dash of Cherry Juice, 2 Ripe Peaches sliced, brown sugar, cloves, nutmeg, cinnamon

All have Fermax, Pectin, and Lalvin D-47 White Wine Yeast.

I just threw them together on the fly, We'll see how they turn out.

Stupid camera is out of batteries.

Five bubbling airlocks in the cabinet looks so good too. :D

I'm assuming you mean pectinase enzyme?

sounds really good, great thing is you can buy it right in the fermenter! I was looking at the site and that apple cherry cider looks like a really tempting experiment also.
 
I use murray's because when im done, ive got 5 one gallon (semi) bulk ageing containers or one gallon fermenters. Great deal.
