Im going to be brewing a AHS American Wheat beer. Im wanting to rack onto cherries in the secondary. My local grocery store sells Oregon Tart Cherries in a waterbase. How much should I use and how long? I dont want it overpowering. If it matters I consider the cherry in Sam Adams Cherry wheat a little on the strong side. Any suggestions?? Ive searched over several pages through the search engine, lots of talk but nobody seems to report back after the fact.

You need a fair amount of fruit to make an impact. My guess is maybe three pounds. SA has cherry flavoring as well as fruit. When the beer is ready to package you can add a little cheery extract if you want some extra aroma.

3 lbs sounds like a good place to start. I can pick up some cherry flavoring also. Im thinking a week or so in the secondary.
