Brewed yesterday, and rushed the wort chilling step, stopping at around 98¯. assuming it would cool further once poured in glass carboy and shaken to aerate, in semi-cool basement.
I then pitched Safale S-04, which took off on me overnight, an carboy is now around 65¯
Is there a chance my poor cooling would produce off flavors down the road?
BTW, the reason I rushed the chilling a bit was my still-leaking chiller connections...darn.
