need help making choke cherry wine

Hi all, I have a lot of wild choke cherry trees that are getting ripe for the pickings. I have made beer in the past but I'd like to make a nice red wine with these. I found this recepie online and was wondering if it was a good guideline to follow? here's the link http://scorpius.spaceports.com/~goodwine/chokecherrywine.htm Where can I buy pecitic enzyme, wine yeast, and campden tabs besides a brewing shop? Any suggestions on the recepie are welcome! Now when I taste the cherry's they are pretty tart so I was thinking I'd like more of a dry wine than a sweet wine? What do you think?
