Looks like a solid recipe to me. I'd up the IBU's a bit if it were me, but I'm a hophed. :D

I have just been looking over my brew log book and thinking the extra $$$ for liquid yeasts is worth it to me.

The one brew I did make with SafAle 05 ws a dicaetyl bomb because I screwed up, but I am pretty well comitted to quality wet yeasts now.

Knowing I run about 70-75% I was looking at scaling your grains down, and scaling my hops up since I have a pound of Amarillo in the freezer oxidating. I'll have to go to Target and grab a salad spinner to get the wort back out of all my hops...

Looks like # 1 (Chico) #8, #29 or #51 from White. I moved from dry to test tube yeast from White just cause I am a pack rat and I know I'll use my collection of test tubes for something some day.

I have used a smackpack and liked the beer....

I'm thinking along the lines of a straight Amarillo, a straight Simcoe and a Amarillo/Simcoe IPA. Then to a side by side sampling. Not sure which one to use as bittering in the 3rd batch.

Thanks for the input. I tweaked the recipe a bit to the following:

Amount Item Type % or IBU
15.05 lb Pale Malt (2 Row) US (2.0 SRM) Grain 83.38 %
1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 5.54 %
1.00 lb Honey Malt (25.0 SRM) Grain 5.54 %
1.00 lb Munich Malt - 10L (10.0 SRM) Grain 5.54 %
1.00 oz Amarillo Gold [8.00 %] (60 min) Hops 20.9 IBU
1.00 oz Amarillo Gold [8.00 %] (30 min) Hops 16.0 IBU
1.00 oz Amarillo Gold [8.00 %] (20 min) Hops 12.6 IBU
2.00 oz Amarillo Gold [8.00 %] (10 min) Hops 15.1 IBU
2.00 oz Amarillo Gold [8.00 %] (5 min) Hops 8.3 IBU
2.00 oz Amarillo Gold [8.00 %] (0 min) (Aroma Hop-Steep) Hops -
1.00 tsp Irish Moss (Boil 10.0 min) Misc
2 Pkgs Nottingham (Danstar #-) Yeast-Ale

Beer Profile Estimated Original Gravity: 1.075 SG (1.050-1.075 SG)
Estimated Final Gravity: 1.018 SG (1.012-1.016 SG)
Estimated Color: 8.4 SRM
Bitterness: 73.0 IBU Alpha Acid Units: 24.0 AAU
Estimated Alcohol by Volume: 7.48 %

Mash Profile Name: Single Infusion, Medium Body, Batch Sparge Mash Tun Weight: 9.00 lb
Mash Grain Weight: 17.05 lb Mash PH: 5.4 PH
Grain Temperature: 70.0 F Sparge Temperature: 168.0 F
Sparge Water: 3.85 gal Adjust Temp for Equipment: TRUE

Name Description Step Temp Step Time
Mash In Add 21.31 qt of water at 172 F 153.0 F 60 min

You definitely do not need 2 packages of Nottingham for 5 gallons. People will use 1 package for 10 gallons. Also, the 1 lb of Honey Malt might be a bit much. The stuff packs a punch.

How long do you steep your final hops. I do mine at least 30 minutes. Check my recipe pulldown for my APA

I was thinking the same thing. I LOVE honey malt, but it is very sweet, and a little goes a long way. I'd cut it down to a 1/2 lb if I were you.

I feel like some amarillo dry hopping would be great too. maybe just do one ounce for those last two additions and dry hop with 2?

is the honey supposed to replace the caramel/crystal? maybe do half pound of each?

Just an update to anyone who cares to know.....but i have had this bottle conditioning now for 3 weeks, and it came out VERY tasty. Lots of flavor from the hops, not much bitterness, but lots of sweet orange and sweet grapefruit flavors....just what i wanted as i wanted the full amarillo flavor to come through...thanks to all who offered advice..you guys rock!:rockin:

Notes
3/15/08-brewday started at 11:30 w chris. Done by 4:30. 153f mash temp. 185f sparge temp. Reused yeast from Nugget IPA. Pitched at 4:30..ferm started within 1 hour! Bubbly twice per sec at 70f for 6hours. Put in garage at 11:30 pm to get temp down.
4/19/08-bottling day. Did not do a secondary on this batch.Used 3 oz priming sugar for 4 gallons.

I'm thinking along the lines of a straight Amarillo, a straight Simcoe and a Amarillo/Simcoe IPA. Then to a side by side sampling. Not sure which one to use as bittering in the 3rd batch.

I just bottled my Simcoe/Amarillo IPA (with a little Horizon also) and although it's not done conditioning, it tasted amazing at bottling. Amarillo's really are killer all around hops. Simcoe would probably be the best bittering hop for that third batch, BTW.

I know I am way late on this one but I have had my rye pale w/ amarillo conditioning for 13days now and tried one last night. I used an oz for my flavoring addition and this sucker packs a strong orange flavor w/ some subtle balsamic undertones. i dry hopped with an oz of amarillo and an oz cascade and you can hardly recognize the characteristic smells of the cascade over the strong orange smell of the amarillo. The beer is still very green and i think the orange flavors are a bit overwhelming at this point but i think in another couple weeks the centennial i used for the bittering addition will start to show up a little more and the orange flavors from the amarillo will mellow out. My big hop 5gallon batches always take forever to reach their apex.
